(Serves 4)

INGREDIENTS:

1 tablespoon olive oil
2 large red onions, thinly sliced
2 tablespoons water
2 tablespoons chopped fresh thyme
1/2 cup flour
1/2 cup milk
2 large eggs
2 egg whites
1 tablespoon oil
1 tablespoon sugar
Pinch salt
1/4 teaspoon pepper
1/3 cup crumbled goat cheese
1 cup while balsamic vinegar
1 tablespoon honey

METHOD OF PREPARATION:

Heat the olive oil in a large, oven-proof, non-stick sauté pan.
Add the onions and cook, stirring occasionally, until tender.
Stir in the water and thyme and mix well. Leave mixture in the pan and set aside.
Preheat an oven to 450 degrees.
In a bowl, blend the flour, milk, eggs, egg whites, oil, salt, and pepper; blend well using a whisk. Pour mixture over the onion mixture and dot with the goat cheese. Place in the oven and bake for 15 minutes, or until puffy. Meanwhile, in a sauce pan combine the honey and balsamic vinegar. Bring to the boil. Continue boiling until reduced to 1/2 cup. Remove from heat and let cool.
Cut the pancake into wedges and drizzle with the balsamic dressing. Serve at once.

Roasted Asparagus Salad with Citrus Dressing Tue, 8 Jul 2008 12:15:55 -0400
(Serves 4)

INGREDIENTS:

2 pounds asparagus, trimmed
1 pint of grape or baby pear tomatoes, cut in half
2 tablespoons olive oil
Salt and pepper
1 tablespoon fresh lemon juice
1 tablespoon orange juice
1 tablespoon honey
1 teaspoon mustard
2 bunches of watercress, trimmed
2 tablespoons chopped dill

METHOD OF PREPARATION:

Preheat an oven to 450 degrees.
Place the asparagus and tomatoes in a bowl. Add the oil and gently stir to coat vegetables. Spread mixture onto a sheet pan and sprinkle with salt and pepper.
Place in oven and roast until the asparagus are barely tender. Set aside.
In a bowl, whisk the lemon juice, orange juice, honey and mustard; mix well.
Add the watercress to the bowl and mix gently. Place on a chilled platter and top with the asparagus and tomato mixture. Sprinkle with the dill and serve.
